Fire up a griddle or clean skillet to medium heat. Give it a spray of oil or toss in a dab of butter. Toss quesadillas on and cook each side for 2 or 3 minutes till they go golden and the cheese is gooey.

Place tortillas on your counter. Scatter about 30 grams cheddar cheese on each. Pile the beef mix on half of every tortilla, then fold them over to cover the filling.

Turn the skillet way down low. Put the cooked bacon back in. Toss in the tomato paste, Worcestershire, mustard, and cream cheese. Keep stirring till the cream cheese is all melted and everything blends together.

Throw in the chopped onion and ground beef into your empty skillet. Cook over medium, using a spatula to break up the beef, till it’s browned everywhere. Pour off any extra fat.

Toss the chopped bacon in a hot skillet over medium and fry till it’s nice and crispy. Scoop it out with a slotted spoon and set it aside. Carefully pour out the bacon grease from the pan.
