Make sure frozen catfish is fully thawed, then wash and dry them with paper towels.

Combine black pepper, oregano, flavored salt, powdered onion, red pepper flakes, chili powder, and cumin in a small container. This makes your DIY Cajun spice mix.

Take out 1 tablespoon of your spice blend for the fish. Keep the leftover mix in a sealed container. It'll stay good for a month at room temp.

Spread the saved tablespoon of spices all over each catfish piece, covering both sides evenly.

Coat a baking dish with a bit of oil or use parchment paper. Lay the spiced fish flat in the dish.

Let the fillets bake for 15 to 18 minutes, turning them once halfway. They're done when the fish breaks apart easily.
