Wash baby potatoes thoroughly and cut them in half to help them roast evenly and ensure crisp edges.

In a large bowl, toss the potatoes with olive oil and ranch seasoning until evenly coated.

Spread the potatoes cut side down on the prepared baking sheet in a single layer. Roast for 25-30 minutes, until golden brown and fork-tender.

Remove the baking sheet from oven, sprinkle cheddar cheese over the hot potatoes. Return to the oven for 5-7 minutes, until cheese is melted and slightly golden.

Scatter chopped chives over the top and serve while still hot and melty.
