Lay some parchment paper on a baking sheet and flick your oven on to 190°C so it can heat up.

Toss the ground beef, breadcrumbs, egg, Parmesan, milk, onion powder, garlic powder, salt, and black pepper in a big bowl. Blend everything gently until it's mixed up, but don't go overboard or it'll get tough.

Grab some meat, flatten it right in your hand, then plop a heaping tablespoon of mozzarella in the center. Pinch the meat around the cheese to close it into a ball. Keep going with the rest of the mix.

Set your stuffed bites spaced on the tray. Swipe a little ketchup over the top of each one. It helps them stay juicy and gives extra flavor.

Pop the tray in the oven and bake for about 20 to 25 minutes. They're done once they're nice and cooked through and hit 70°C inside.

Give the meatloaf bites a few minutes to chill. After that, move them to a plate and sprinkle over as much parsley as you want. Time to dig in!
