Grab a big bowl and mix olive oil, lemon juice, honey, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if you want it spicy). Give it a good whisk until everything comes together.

Drop your chicken pieces into the bowl. Toss 'em around till they're all coated. Pop some plastic wrap on top and chill in the fridge—at least half an hour, but leaving it for two hours makes it even tastier.

Crank up your grill or set a grill pan over medium-high heat. Let it warm up real nice so the cooking's even.

Take the chicken out of the mix and toss out any leftover marinade. Lay the pieces on the hot grill. Cook each side about 5 to 7 minutes, flipping once. Look for those grill marks and make sure the middle hits 75°C.

Move the cooked chicken bites onto a plate. Let 'em hang out for a couple minutes before you dig in. They're awesome with your favourite dip or side dish.
