Cut your burritos in two. Offer them up right now on a plate, with some salsa and sour cream on the side for dunking.

Heat a big skillet or griddle over medium. Put burritos down so the seam faces the pan. Let them toast 1 or 2 minutes per side till they're crisped up and golden.

Bring the tortilla ends in, then roll up from the bottom real tight so the filling is all wrapped in.

Lay out a tortilla on the counter, sprinkle cheese down the middle, top with chicken mix and a pile of lettuce.

In a big bowl, throw in your chicken, avocado pieces, tomato, red onion, chopped cilantro and lime juice. Add ranch. Give it all a gentle toss. Add salt and pepper till you like how it tastes.
