20 - 60g diced red onion
21 - 120g fresh chopped tomatoes

# Step-by-Step Instructions:

01 - Scoop some rice and lay it down first if you're using it. Throw on your thinly sliced chicken next. Add in tomatoes, onion, and a bit of cilantro. Don't forget the cheese, maybe some lettuce if you want, and avocado or guac. Pour on as much chipotle ranch as you like. Fold in both sides, roll everything up, and enjoy while it's warm.
02 - Pop your tortillas in the microwave or toss them on a skillet. Let them heat until they get soft and bendy.
03 - Chop everything you need: the cooked chicken, tomatoes, onion, and cilantro. Set out some jalapeño or chili if you're going spicy, lettuce or spinach, cheese, avocado or guacamole, and rice if you like it.
04 - Mix up ranch dressing, a couple chipotle peppers, lime juice, garlic powder, and salt in your blender or food processor. Whirl it all until it’s totally smooth. Taste and tweak it if it needs more salt or pep.
