Flip the fillets gently, brush them with half your honey garlic mix, and keep cooking for another 3 to 4 minutes. You're good to go when the fish pulls apart easily and hits 63°C inside.

Get your oil hot in a big non-stick pan over medium-high heat. Put the salmon in skin first and leave it alone for 4 minutes, so the skin goes crispy and golden.

Mix honey, soy sauce, and minced garlic in a small bowl with a whisk. Keep this handy for glazing in the pan.

Give the salmon a rinse in cool water. The drier you get it with paper towels, the crispier the skin will be.
