01 - 1 tablespoon olive oil

07 - 680g chicken thighs or breasts, no bones or skin

11 - 120ml BBQ sauce

13 - 4 garlic cloves, finely chopped

15 - 125ml sour cream or Greek yogurt (for topping)
16 - 1 lime, sliced into wedges
17 - 60ml fresh cilantro, chopped
18 - 125ml cheddar or Monterey Jack cheese, shredded
19 - 60ml red onion, chopped fine
20 - 125ml tomatoes, diced
21 - 125ml lettuce, shredded
22 - 8 little tortillas (flour or corn)

# Step-by-Step Instructions:

01 - Fill the tortillas with the saucy chicken. Add lettuce, tomatoes, onions, cheese, and cilantro on top. Squeeze a bit of lime juice and scoop on some sour cream or yogurt if you like.
02 - Set a dry skillet on medium. Warm each tortilla for about 15 seconds each side. You want them soft, maybe a little scorched if that's your thing.
03 - Put the sliced chicken back in the pan. Stir it around to coat every piece with that sauce. Let it bubble for two minutes so everything tastes awesome.
04 - With the same pan on medium, toss in butter and let it melt. Throw in chopped garlic and cook for half a minute till it smells crazy good. Pour in honey, BBQ sauce, soy, apple cider vinegar, and add red pepper flakes if you want some heat. Mix it well and let it bubble a couple minutes till it's a bit thick.
05 - Pour olive oil into your big pan on medium-high. Put in the seasoned chicken and cook it for about 5 to 6 minutes on each side till the outside is brown and the inside hits 75°C. Set it on your board to rest for 5 minutes, then slice it up.
06 - Dump salt, pepper, smoked paprika, garlic powder, and onion powder into a bowl. Mix them and rub all over the chicken so it's completely covered.
