Halloumi Lemon Thyme Skewers (Printer-Friendly Layout)

# Ingredients You'll Need:

→ For the Skewers

01 - 200 g cherry tomatoes
02 - 1 medium red onion, chopped into chunky pieces
03 - 1 lemon, sliced into skinny wedges
04 - 250–280 g halloumi cheese, chopped into thick cubes about 2.5 cm

→ For the Marinade

05 - Fine sea salt (throw in just as much as you like)
06 - 1 teaspoon honey
07 - Freshly ground black pepper (just add to your liking)
08 - 2 garlic cloves, smashed and chopped up small
09 - 1 tablespoon fresh thyme, snipped up (or 1 teaspoon dried kind if that’s easier)
10 - 30 ml lemon juice, squeezed right from the fruit
11 - 45 ml extra virgin olive oil

→ Optional Garnishes

12 - Crushed red pepper flakes
13 - A few sprigs of fresh thyme

# Step-by-Step Instructions:

01 - Once the skewers are grilled, set them on a plate. Throw on some fresh thyme and a bit of red pepper flakes. A little splash of olive oil is nice too. Grab those lemon wedges and enjoy right away.
02 - Toss the skewers onto the grill and let them cook for a couple minutes per side. Turn them so all sides get golden and a touch charred. Halloumi should look crispy; veggies should be soft.
03 - Warm up your grill or grill pan to a pretty hot temperature. Give the grates a quick brushing with oil so nothing sticks.
04 - Stick the halloumi, tomato, onion, and lemon wedges onto your skewers however you want. Try to change up the order for fun. Dab leftover marinade over everything.
05 - Put the halloumi cubes in the marinade. Mix them gently so all of the cheese gets covered. Let it sit out for at least 10 minutes.
06 - Pour the olive oil, lemon juice, thyme, garlic, honey, salt, and some pepper into a small bowl. Whip it together until it blends nicely.
07 - Chop halloumi into chunky blocks. Cut your onion into big pieces and slice the lemon into thin wedges. Rinse the tomatoes. Pat the cheese dry with a towel.

01 - Soak your wooden skewers in water for about 15–20 minutes before putting them together so they won’t burn on the grill.
02 - Letting your halloumi sit in marinade makes it taste better and keeps it soft while grilling.
