Sprinkle a little salt on both sides of your chicken thighs.

Pour a bit of oil into a big pan and turn heat to medium-high. Put chicken down with skin facing the pan if you've got skin-on pieces. Let them cook about 7 to 10 minutes on each side until they turn golden and crispy outside. If too much fat comes out, you can scoop some out and save it for later.

While your chicken cooks, stir soy sauce, honey, garlic, water, and lemon juice together in a small bowl. Give it a taste and tweak it how you like. Want it more zingy? Add extra lemon. Need it sweeter? Throw in more honey.
