Switch your oven to 200°C (400°F) so it gets nice and hot.

Put down two big foil sheets on your counter, make sure it's clean and flat.

Set chicken pieces on a board and brush both sides with olive oil.

Dust each piece with pepper, salt, paprika, cumin, garlic powder, and chili powder.

Massage all those spices in so the chicken's fully covered.

Put a chicken piece in the middle of each foil sheet.

Add some corn, beans, tomatoes, onion, and peppers right on top of the chicken.

Sprinkle about 1/4 cup or 60 grams of cheddar cheese over each piece of chicken.

Bring the foil sides up and pinch them closed tight to make a little bundle for each chicken.

Slide your foil bundles onto a baking tray and cook for about 25 to 30 minutes, or till you see 75°C inside the chicken.

While that bakes, toss tortillas into a dry pan for about half a minute per side till they’re soft and warm.

When ready, open up the packets slowly—watch out for that steam.

Drizzle lime juice all over and throw on chopped cilantro before serving.
