Dig in while everything’s still hot. Add lettuce, tomato, or pickles if that’s your thing.

Grab the bagels and slather the homemade sauce on both sides. Lay some scrambled eggs on the bottom halves, pile on steak, onions, melted cheese, then close up each bagel.

Get the bagels crispy, either tossing them in a toaster or sliding them on the hot pan until they’re just golden.

With the last bit of butter, cover the pan and cook the seasoned beef spread out in a single layer. Stir now and then for about 2–3 minutes till it’s browned and cooked through. Slide the onions back in, mix, split the meat into two heaps, then melt a slice of cheese on top of each pile.

Throw the shaved steak into a bowl. Drench it with the Worcestershire and sprinkle over the Montreal steak seasoning. Mix everything up so the beef’s coated nicely.

Pop another spoon of butter in the same skillet. Pour the eggs in and scramble them gently over medium heat just until they’re set but still creamy. Split in half for two servings.

Let a tablespoon of butter melt in the pan on medium. Drop in the sliced onions and salt. Stir once in a while as they cook for 5 to 7 minutes, letting them get soft and golden. Move them out of the skillet and set aside.

Mix up the mayonnaise, mustard, and dried dill in a little bowl. Pop the bowl in the fridge until you’re ready for it. This makes the sauce taste even better.
